Where to start...I like Rpg's and shooters, so here would be my pick ups.Rpg'sMass Effect, Tales of Vesperia, Fable 2ShootersHalo 3, Gears of WarAlso you should probably play Crackdown, one of the best games this gen imo.I'd add more, but I am sure others will chime in with plenty.

ya Fable is pretty sweet, i've only ever played the first fable on the original xbox, but it seems like a good choice.

Ya Forza is good, i liked burnout also.
Best sim type racer is Forza 2, but you may find it boring. PGR4 and GRID are very enjoyable racers. You should be able to get PGR4 pretty cheap now. Both have demos on Xbox live.
Make sure to pick up Fallout 3 on Tuesday, its gonna get GOTY.
